Blueberry breakfast parfait

Healthy parfaits are one of my favorite things to make for breakfast since they are not only super filling and full of nutrients, but they also look and taste absolutely amazing! It almost feels like I am having dessert for breakfast – does it get much better than that?! Haha well maybe if I had actual dessert for breakfast ;)

Parfaits might seem like a lot of work, but they are actually really easy to make and they usually do not take much time to prepare either. To make this blueberry breakfast parfait you simply layer blueberry smoothie (blend banana, blueberries, a little pure vanilla powder and almond milk), skyr/greek yoghurt, muesli, mixed berries (I used blueberries and strawberries), banana slices, more blueberry smoothie and some fresh blueberries to top it all off, enjoy!

Tropical parfait

Hello lovelies, I am so behind on editing pictures and writing up recipes, but I promise I will get through all of them soon so I can share more of the goodies I made while staying with my parents. Until then here is a little breakfast inspiration for you – this tropical parfait is so easy to make and taste absolutely amazing! It reminds me of beaches and palm trees, haha and since I won’t be seeing either of those anytime soon I guess I will just have to eat a lot of this parfait instead ;)

To make the parfait simply mix plain skyr/greek yoghurt with a little acacia honey and shredded coconut and top it with sliced banana, muesli, passion fruit, chopped pineapple, shredded coconut and freeze-dried raspberry, enjoy!

Messy raspberry parfait

Messy parfaits are one of my favorite things to have for breakfast, they’re so easy to make, super filling and even though this one almost tasted like dessert it’s actually all healthy.

Raspberry smoothie: 1 cup frozen raspberries, 2 very ripe bananas, pure vanilla powder and a little water to blend.
Plain skyr/greek yoghurt
Banana slices
Honeay toasted muesli, dried white mulberries and freeze dried blackberries

As you might have noticed I absolutely love making healthy versions of parfaits! They’re so tasty, surprisingly filling and the flavor combinations are pretty much endless. I love making them for breakfast when I have a little extra time in the morning, but also as a snack or as a healthy dessert.
