Beet ‘n raspberry rainbow bowl

Is there a better way to start the day than with one of these colorful smoothie bowls?! I cannot be anything but in a good mood when I eat one of these and I feel so energized and full afterwards as well – definitely a favorite of mine!

A while back I needed to buy beetroot dust (dried and blended beetroot) for a magazine foodie shoot I was working on, but by mistake the heath store employee gave me a jar of beet crystals instead. I didn’t work that well for the shoot (we managed though), but the crystals are absolutely perfect for adding to my smoothies and chia parfaits, I am obsessed! Not only is it super healthy and nutritious, but it is also delicious and adds the prettiest pink color to everything. If you haven’t heard of beet crystals before, they are simply made from 100% freshly pressed beet juice that have been crystalized, but you can easily use fresh beet juice or beet pure (or just regular raw or baked beets) instead.

Bet'n'raspberry rainbow bowl
Ingredients – 1 serving:
1 cup frozen raspberries
2 tablespoons beetroot crystals or beet juice/beet to taste
1 banana
1 tablespoon shelled hemp seeds – optional
1/2 teaspoon pure vanilla powder
A couple drops of liquid stevia
Oat milk to blend

Simply add everything to a blender and pulse until smooth. Pour the smoothie into a bowl and add your toppings of choice, I topped mine with homemade granola, kiwi, blueberries, bee pollen, passion fruit, currants and freeze-dried raspberry, enjoy!

Green smoothie bowl with vanilla and lime
Ingredients:
1/2 avocado
1 banana, ripe with brown dots
100 grams frozen spinach
1 deciliter (equals 0.4 cup) vanilla yoghurt
1/2 teaspoon pure vanilla powder  – buy it right here!
The juice of 1 lime + a little zest if you’d like
A couple drops of liquid stevia or 1-2 pitted dates
Oat milk to blend

Simply add everything to a blender and pulse until smooth, pour the smoothie into a bowl and add your toppings of choice. I topped mine with homemade granola (lots of recipes right here!), edible flowers + red and golden raspberries from my garden, enjoy! ❤︎

Two of my my favorite smoothie bowl recipes (acai & peanut butter/mixed berries) + matcha rawnolaOkay so I know these smoothie bowl recipes are not exactly groundbreaking, I have shared something similar before, but I just love the flavors of them and they turned out way too pretty not to be shared! ❤︎

One is with acai and berries and the other is with peanut butter and berries, so yum! Both of them are topped with my favorite matcha rawnola, fresh fruit and the cutest edible flowers! Enjoy!

Acai berry smoothie bowl
1 cup mixed frozen berries (I used blueberries and strawberries)
1 banana, ripe with brown spots
1 tablespoon acai powder – buy it right here and here!
1 handful fresh spinach
1/2 teaspoon pure vanilla powder – buy it right here!
1-2 pitted dates, optional
Oat milk to blend

Toppings: matcha rawnola (recipe right here!), blueberries, kiwi berries and edible flowers.

1 banana, ripe with brown spots
1 heaping tablespoon smooth peanut butter
1 tablespoon hemp seeds – buy it right here!
1/2 teaspoon pure vanilla powder – buy it right here!
Oat milk to blend

Toppings: matcha rawnola (recipe right here!), blackberries, raspberries, strawberries, kiwi berries and edible flowers.

Green bliss peanut butter smoothie bowl

Green bliss peanut butter smoothie bowlIngredients:
100 grams frozen spinach
100 grams frozen broccoli
1 ripe banana
1/2 teaspoon pure vanilla powder – buy it right here! (affiliate link)
1 heaping tablespoon peanut butter
A splash of almond milk

Simply add everything to a blender and pulse until smooth, pour it into a bowl and add your toppings of choice. I topped mine with kiwi berries, golden raspberries, kiwi, raspberries, blackberries and sprinkles of freeze-dried raspberry + raw coconut chips, enjoy! ❤︎

Colorful coconut smoothie bowls with edible flowers

DSC_9225 DSC_9211Hi lovelies, I hope you are having an amazing week so far? We have the most amazing weather in Denmark right now (I know I am completely weather obsessed), so I have been trying to make the most of it with lots of homemade popsicles (recipes right here!) and colorful summery smoothie bowls! During the weekend I made these super cute little coconut smoothie bowls that I just had to share with you guys! It is so simple, but so cute and pretty! ❤︎

How to open the coconut 
To break open the coconut I simply took my hammer and hit the coconut all the way around on the middle of the coconut where I would like it to break open. You should be able to see it slowly cracking, so just keep hitting it until it has cracked open all the way around the coconut. If you are having trouble getting it open, even though you can see that it has cracked all the way around, then you can (carefully) use a knife to twist it open.

I have found a little video tutorial showing the technique right here! I skipped the first step since I wanted to use it as a bowl, but you can still save the coconut water, just hit it carefully as described and pour the coconut water into a bowl when it starts to crack open. I used the coconut water for a delicious green smoothie – I will share the recipe asap!

Make sure to save the coconut meat as well for a yummy snack or to use in recipes – I will share my favorite ways to use it in another blogpost, I am still working on the recipes ❤︎

A little almond milk to blend

Simply add everything to a blender and pulse until smooth. Pour the smoothie into the coconut bowls and add your toppings of choice. I topped mine with raspberries and golden berries from my garden + blueberries, blackberries, strawberries, kiwi berries and edible flowers (the pansies are store-bought and the nasturtiums are homegrown + picked on my morning walk).
