Is there a better way to start the day than with one of these colorful smoothie bowls?! I cannot be anything but in a good mood when I eat one of these and I feel so energized and full afterwards as well – definitely a favorite of mine!
A while back I needed to buy beetroot dust (dried and blended beetroot) for a magazine foodie shoot I was working on, but by mistake the heath store employee gave me a jar of beet crystals instead. I didn’t work that well for the shoot (we managed though), but the crystals are absolutely perfect for adding to my smoothies and chia parfaits, I am obsessed! Not only is it super healthy and nutritious, but it is also delicious and adds the prettiest pink color to everything. If you haven’t heard of beet crystals before, they are simply made from 100% freshly pressed beet juice that have been crystalized, but you can easily use fresh beet juice or beet pure (or just regular raw or baked beets) instead.

Ingredients – 1 serving:
1 cup frozen raspberries
2 tablespoons beetroot crystals or beet juice/beet to taste
1 tablespoon shelled hemp seeds – optional
1/2 teaspoon pure vanilla powder
A couple drops of liquid stevia
Oat milk to blend
Simply add everything to a blender and pulse until smooth. Pour the smoothie into a bowl and add your toppings of choice, I topped mine with homemade granola, kiwi, blueberries, bee pollen, passion fruit, currants and freeze-dried raspberry, enjoy!
