Savory soy roasted almonds

These delicious soy roasted almonds are one of my new favorite go-to’s for a super easy and delicious snack. I usually crave sweeter snacks and treats, but lately I have been going crazy for savory and salty snacks and these really hit the spot!

I love to chop the almonds and add them to my salads for extra texture and flavor as well. I have this delicious salad that I have been making all summer, where these are just the perfect fit – I promise I will share the recipe for it asap! This recipes only makes a small portion, but I recommend making a bigger batch, so you have them for salads and snacking throughout the week.

Savory soy roasted almonds

Ingredients:
1.5 deciliter (equals 0.6 cup) almonds
1 tablespoon soy
1/2 tablespoon sesame oil
1 teaspon coconut sugar
A large pinch of chili powder

Savory soy roasted almonds

Directions:
Start by preheating your oven to 180 c // 360 f. Then add the soy, sesame oil, coconut sugar and chili powder to a bowl and stir it together. Add the almonds and mix until they are completely coated by the soy mixture. Pour the almonds onto a baking tray lined with baking paper and make sure to spread them out evenly. Bake the almonds for about 10 minutes (stir midway) until they have browned to a shade darker, are fragrant and no longer wet to the touch. Let them cool and store them in an airtight jar, enjoy!

Hi lovelies! I am finally back home from LA after a very long day of traveling (20+ hours, yikes!), I am so tired and a bit jet lagged, so I think I am just going to keep it short. I had the best trip and it was so amazing to finally be able to take some time off to completely relax and just have fun. When you are your own boss and work from home (or wherever I have wifi and my laptop), then it is so hard to properly take time off and I usually work everyday (weekends included) and often really late, so it felt good to finally get a full week off without doing any work.

Oh and some of you have been asking for more LA food recommendations, I am a creature of habit, but I did try some great new places that I promise I will add to my little LA food guide asap!

Anyways, today I want to share the super easy recipe for these fresh and delicious tropical popsicles with pineapple, passion fruit and coconut – I could really have used one of these babies when I was in LA! They are all healthy and made with natural ingredients, but I promise that they still taste absolutely amazing! I recommend using a very ripe (almost too ripe) pineapple to make sure that they are sweet enough, if your pineapple is not very sweet then maybe add a little bit of pure maple sirup or a little liquid stevia, enjoy! ❤︎

Ingredients – 5 popsicles:
1 cup (equals 2.4 deciliter) ripe and sweet pineapple
The juice from 1/2 lime
1/2 can of coconut milk, the thick part
1/2 teaspoon pure vanilla powder
2 passion fruits

Directions:
Simply blend everything together (except the passion fruit), stir in the passion fruit and pour the mixture into the popsicle moulds. Add the popsicle sticks and put it in the freezer overnight or at least for 5-6 hours. Enjoy!

The perfect summer snack

The perfect summer snack - watermelon, lime and passionfruit

Okay I know that I am really late to the party with this combo – ever since Loni Jane first posted this yummy and gorgeous combo of watermelon, lime and passionfruit over on Instagram it has been the shit. Haha I mean pretty much everyone but me seems to have given it a try, but when you live in a country with limited acces to proper ripe and sweet watermelons (I might just be awful at picking the right ones), then watermelon isn’t really something you buy until summer and melon season has properly kicked in. I did finally give it a try yesterday though and it is so delicious, a must try! The flavors go so well together and makes for the perfect fresh and summery snack. Next time im gonna cut the watermelon into cubes, so I will be able to eat it with a fork (less messy) and then just add it to a bowl with a squeeze of fresh lime juice + lots of passion fruit, so yum!

In light of my recent blogpost regarding my peanut butter obsession I thought it would only be fair to share one of my favorite super easy recipes that ensures I get my peanut butter fix, but without completely overindulging in half a jar of peanut butter. Haha and yeah that might have happened before ;)

I love making this delicious peanut butter dip as both an easy snack or as a healthy treat, it takes absolutely no time to make and it is thankfully far from as calorie dense as pure peanut butter. I usually make this amount for two people and serve it with two small sliced apples + a mix of cacao nibs and chopped nuts for a little extra crunch and flavor, so yum!

Ingredients:
6 tablespoons skyr or greek yoghurt
1-2 tablespoons peanut butter
1/4 teaspoon pure vanilla powder
1/2 – 1 tablespoon acacia honey or pure maple sirup

Directions:
Simply mix everything well together and the dip is ready to be served, enjoy! I served mine with sliced apple and a mix of chopped cacao nibs and nuts, so delicious!

Okay so the lovely summer weather might have temporarily left us, but I am still crazy about homemade healthified popsicles, they are just so delicious and easy to make + it is so much fun to experiment with new flavors! I love to enjoy them both as a snack, healthy treat or even for breakfast when I am in a hurry. This time I have made popsicles inspired by my parfaits with strawberry/rhubarb compote (find the recipe right here!) and homemade granola and I think they turned out so well! Some of you have been requesting more options for vegan popsicles, so I am working on a couple of recipes that I will share with you lovelies asap. Until then you can give my vegan fruity rainbow popsicles a try, find the recipe right here :)

Healthified vanilla popsicles with strawberry and rhubarb

Ingredients – 4 popsicles:
2 1/2 deciliter skyr or greek yoghurt
1/2 teaspoon pure vanilla powder
1 tablespoon akacia honey or pure maple sirup
A couple drops of liquid stevia – optional
1 1/2 deciliter strawberry/rhubarb compot
1 deciliter granola, storebought or homemade
1 tablespoon coconut oil, melted

Directions:
Start by mixing the skyr/greek yoghurt with the vanilla powder, acacia honey and stevia. Pour the vanilla mix and strawberry/rhubarb into the popsicle moulds, I mixed the two for a marbled effect, but you can add them however you’d like. Make sure to leave a little room for the granola. Mix the granola with the coconut oil and add it to the moulds. Put in the popsicles sticks and let them set in the freezer for at least 5 hours before serving, enjoy!
